1. Preparation in the Kitchen

The process begins in the kitchen. Meals are arranged directly on plates with garnishes. Ensure the portions follow the standard: e.g., 75g of carbohydrates, 175g of vegetables, and 175–225g of animal protein.

2. Delivery to the Guest’s Table

Once the meal is ready, it is transported using a tray to the side stand. Then, it is served to the guest using both hands, without the tray. The plate is placed in front of the guest, with utensils arranged from the right side.

3. Beverage Service

While serving drinks, the server holds the tray with the left hand, with the right foot slightly forward. The right hand is used to place the drink on the guest’s right side in a calm and tidy manner.

4. Clearing the Table

After the main course, the server performs crumbing down before serving the next course. All used tableware is cleared from the right using the right hand, without a tray. 

Glasses and cups are also cleared from the right and placed on a tray held in the left hand. 

Finger bowls, salad bowls, and bread and butter plates are cleared from the left using the left hand.
